Two- or Three-Bay Dishwashing Sink

Depending on the category of your kitchen and the health codes of your area, you may be required to have a two- or three-bay sink. Three-bay sinks are common in commercial kitchens because they offer a cleaning system that’s easy to follow and hygienic. The first bay is for soaking, the second bay is for rinsing, and the third bay is for sanitizing. Four bay sinks are also found in many kitchens.

Prep Sink

The prep sink may be a deep-bay sink of any kind but used only for food washing and preparation. Prep sinks are useful in many kitchens when large quantities of food need to be washed or soaked, or when food preparation results in a considerable amount of excess liquid.

Hand Sink

An absolute necessity in any professional kitchen, the hand sink is required by health code and is only to be used for the explicit purpose of hand washing. Hand sinks come in a variety of styles, including those that mount to the wall and those that can be embedding into prep tables or other surfaces. Splash guards on the side of a hand washing sink are a common addition, one that may be required per the health codes in your area.
